Abstract: Within recent years, the number of outbreaks of shiga toxin-producing Escherichia coli (STEC) linked to flour and flour products has risen dramatically. Previous studies that linked outbreaks of STEC to consuming raw cookie dough, prompted the Swiss Federal Food safety and Veterinary Office (BLV) to investigate the occurrence of STEC in Swiss flours. The findings were positive, though not in alarming numbers. Thus, the BLV tasked the Zurich University of Applied Sciences to investigate further into this topic and to give insight on the dangers of flour and flour products infected with STEC.
